Healthy spring rolls & Thai peanut dipping sauce

Ingredients:

  • Rice paper sheets

  • 1 bell pepper, sliced

  • 1 large carrot, peeled and sliced

  • ½ a large cucumber, sliced

  • 1 or 2 large stalks of celery, sliced

  • 1-1 ½ cups fresh romaine leaves

  • ¼ cup edamame beans shelled

Optional add-ins:

  • Cilantro

  • Green onions

  • Basil

  • Mint

  • Sriracha or chilies

Ingredients for the sauce:

  • Peanut butter

  • soy sauce

  • rice vinegar

  • agave

  • water

  • garlic powder



Directions:

  1. Layout all veggies, lettuce, edamame, and add-ins to allow for easy assembly.

  2. Pour some warm water into your large plate to cover the entire surface. This should be large enough to dip the rice paper into.

  3. Dip both sides of one piece of rice paper into the water and quickly lay it out onto a flat surface. Be sure to not let the paper soak for more than a second, it should still be stiff and soften as you are filling it.

  4. Layout your veggies and edamame into a neat stack in the middle of the rice paper. Mix and match with any optional add-ins to your liking!

  5. Fold the bottom edge and sides over the stack, rolling it tightly until the two edges meet and seal.

  6. Assemble the rest of your rolls until all ingredients are used up. Try not to let them touch as they will stick together.

  7. Enjoy with your dipping sauce!
